Vodka & Tonic
Prep time:
Two ingredients and nowhere to hide. It is the cleanest of the tonic highballs and also the one most people get wrong, because when it falls flat the vodka gets the blame — and it is almost never the vodka.
Ingredients
- 50 ml vodka
- 120 ml well-chilled tonic water
- Large ice cubes
- Half a lime, in wedges
Preparation
- Chill the glass with ice and a little water while you get everything else ready, and tip it out before you build the drink.
- Fill the glass to the top with ice and pour in the vodka. The ratio is one part vodka to two or three of tonic, depending on how strong you want it.
- Squeeze a lime wedge straight over the vodka, before the tonic. This is the step that separates a good vodka tonic from a glass of fizzy water: the vodka brings no acidity and neither does the tonic, so without citrus there is nothing holding the drink up.
- Add the tonic slowly, down the side of the glass, so you do not kill the fizz.
- Stir once and drop another lime wedge in.
Bartender’s notes
What is in a Vodka Tonic?
Three things and no more: vodka, tonic and citrus. One part vodka to two or three of tonic, ice to the top and lime squeezed over it. No sugar, no syrup, nothing to soften it — it is one of the cleanest drinks there is, and that is the whole point of it.
Which vodka should you use?
It need not be the most expensive, but it should be decent: in a drink this bare, a harsh vodka announces itself on the first sip and there is nowhere to hide it. If you prefer lemon to lime, go ahead. Lemon makes it rounder and softer; lime, drier and sharper.
