Pisco Sour

Peru's ambassador in a glass. Creamy, citrusy, and with a touch of bitters that makes it unmistakable. A world-renowned South American classic.

Ingredients

  • 2 oz of pisco
  • 1 oz of fresh lemon juice
  • 1 oz of sugar syrup
  • 1 egg white
  • 3-4 drops of Angostura bitters

Preparation

  1. In a cocktail shaker without ice, add the pisco, lemon, syrup and egg white.
  2. Do a dry shake (without ice) for 15 seconds to emulsify the egg white.
  3. Add ice and shake vigorously for another 15 seconds.
  4. Double strain into a coupe glass or lowball glass.
  5. Add 3-4 drops of bitters on top of the foam.
